I don't know anything about metadata, but I'll trust it's a rather boneheaded move for someone who knows how to do mixing and recording.

As for her involvement, I haven't read the links you provided, but I'd imagine that in her poor health she was willing to believe him (and may not have had the energy to question him critically) when he told her he was able to edit out the extraneous noise, etc.
